Viral Erewhon Smoothie Recipes: How to Make the $21 Originals for Under $5

Master the "Hailey Bieber" and "Coconut Cloud" aesthetic at home. Exact ingredients, budget swaps, and the secret to that thick, soft-serve texture.

Three Erewhon smoothie dupes side by side on a marble countertop, featuring a pink Strawberry Glaze, a blue Coconut Cloud, and a golden Kinsicle smoothie in clear glasses with coconut cream swirls

Erewhon sells 40,000 Strawberry Glaze Skin Smoothies every single month [1]. At $21 per cup [2], that single recipe generates roughly $840,000 in monthly revenue for a grocery store. A GROCERY STORE.

  • You know the coconut cream swirl.
  • You know the saturated fruit glaze and the thick pour that looks like soft-serve pouring into a clear glass.
  • You have saved the TikToks and the Pins.
  • You have also seen that price tag and closed the app.

I spent two years buying, breaking down, and reverse-engineering the top Erewhon smoothie recipes.

Your total cost per smoothie at home sits around $4 to $5.

Three recipes. Three price breakdowns. One troubleshooting section.

Let’s build them.

Anatomy of a Viral Erewhon Smoothie

Every viral Erewhon smoothie recipe follows the same 3-part structure. Master this framework, and you can create your own.

  1. Layer 1, the Glaze or Puree. This fruit reduction sits at the bottom of the glass and acts as the aesthetic anchor. The strawberry compote in the Hailey Bieber recipe, the turmeric drizzle in the Kinsicle. This layer creates the “wow” when you look through the glass.
  2. Layer 2, the Cloud. Thick, chilled coconut cream spooned onto the inner walls of the glass and dragged upward. It creates white vertical streaks that look like clouds once the base pours in.
  3. Layer 3, the Base. FROZEN fruit only, combined with minimal liquid. That ratio produces the viscous, soft-serve texture. Fresh fruit makes it watery. Every time.

Every viral Erewhon smoothie follows this 3-layer formula. The glaze at the bottom, the coconut cream “clouds” on the walls, and the thick frozen fruit base poured through the center.

About those “special” ingredients.

Sea moss gel and collagen peptides appear in many Erewhon smoothie recipes.

Sea moss is a red algae containing carrageenan, a natural thickening agent that also supplies minerals like iodine, potassium, and magnesium [3].

Collagen peptides provide protein and may support skin hydration and elasticity, according to a 2023 systematic review published in Nutrients [4]. Both add thickness to the smoothie. You can swap them (Section VI covers how).

“Do I really need $30 sea moss gel?”

No. Soaked chia seeds or a quarter teaspoon of xanthan gum give you 90% of the same texture.

Now that you have the formula, let’s build the most searched Erewhon smoothie recipe on the internet.

Hailey Bieber’s Strawberry Glaze Skin Smoothie

This recipe launched in 2022 alongside Bieber’s skincare brand Rhode [1]. It moved 40,000 units per month, making it the most ordered smoothie in Erewhon history [1]. The current price sits at $21 [2].

(Ed. note: Bieber’s name was removed from the menu in late 2025 after the contract expired, but the recipe remains identical. [5])

The original ingredients include:

  • Malk unsweetened almond milk,
  • organic strawberries,
  • banana,
  • avocado,
  • Medjool dates,
  • maple syrup,
  • Vital Proteins vanilla collagen peptides,
  • sea moss gel,
  • Neocell hyaluronic acid drops,
  • vanilla stevia,
  • Zuma Valley coconut cream, and a
  • strawberry glaze [1][6].

Here is what the splurge ingredients actually do.

Hyaluronic acid = a molecule in your body that holds up to 1,000 times its weight in water. A 2021 double-blind, placebo-controlled study found oral HA improved skin wrinkles and moisture content after 12 weeks [7].

The Erewhon version uses tasteless liquid HA drops. Vanilla collagen peptides provide roughly 18 to 20 grams of protein per scoop and contribute body to the blend. Sea moss gel thickens everything and adds a mineral boost.

Equipment

  • 1 1 High-Speed Blender (Vitamix or Ninja recommended for thickness)
  • 1 Small Saucepan (for the glaze)
  • 1 Tall Clear Glass (clear glass creates the aesthetic)
  • 1 Spatula or Spoon (for creating the coconut swirls)

Ingredients

The Strawberry Glaze

  • ½ cup Frozen Strawberries (or fresh, chopped)
  • 1 tbsp Maple Syrup (can substitute with agave or honey)
  • 1 tbsp 1 Tbsp Water (just enough to steam the fruit)

The Coconut Cloud

  • 2 tbsp Coconut Cream, from a can (full fat), chilled overnight; thick part only
  • 1 pinch Vanilla Bean Paste (optional, for flavor)

The Smoothie Base

  • 1 cup Frozen Strawberries (do not use fresh; it makes the smoothie watery)
  • ½ large Frozen Banana, pre-sliced and frozen
  • ¼ medium Avocado (adds creaminess without flavor)
  • 2 whole Medjool Dates, pitted
  • 1 scoop Vanilla Collagen Peptides (Vital Proteins or similar) [6]
  • ½ cup Unsweetened Almond Milk (Malk is used at Erewhon)
  • 1 tbsp Sea Moss Gel (optional; adds thickness and minerals)
  • 1 tsp Hyaluronic Acid, liquid supplement form (optional)
  • ½ tsp Vanilla Extract

Instructions

Prepare the Glaze

  • In a small saucepan over medium heat, combine 1/2 cup strawberries, maple syrup, and water.
  • Simmer for 2 to 3 minutes until berries break down into a jam-like consistency.

  • Mash slightly with a fork.
  • Set aside to cool completely. Hot glaze will melt your smoothie.

Blend the Smoothie

  • Add almond milk to the blender first (helps blades spin)
  • Add frozen strawberries, frozen banana, avocado, dates, collagen, sea moss, hyaluronic acid, and vanilla
  • Blend on high. Use the tamper stick to push ingredients down. Target a soft-serve ice cream texture. If too thick, add more milk 1 tablespoon at a time. Do not over-dilute.

The “Erewhon” Assembly

  • Spoon the Strawberry Glaze into the bottom of your tall glass
  • Dip a spoon into the Coconut Cream, press the back against the inside walls, and drag upward to create 3 to 4 vertical white swirls
  • Pour the thick smoothie into the center
  • Optionally, top with a final dollop of coconut cream. Stir slightly with a straw for the marble effect.

Notes

  • If you cannot find canned coconut cream, use coconut yogurt. Cocojune is the brand used at Erewhon. It is slightly tangier but works visually.
  • Skip the sea moss gel if you do not have it. For the thickening effect, add 1 tablespoon of soaked chia seeds or flax gel.
  • If you are Vegan, use a plant-based vanilla protein powder instead of collagen peptides
  • Make sure your dates are soft. If they are hard or dry, soak them in warm water for 5 minutes before blending to avoid chunky bits
  • The Hyaluronic Acid is purely for the “skin glow” marketing angle. It has no taste. Omit it to save money
  • You can also use aloe vera juice (1 to 2 teaspoons) instead of hyaluronic acid drops.
  • Use any unsweetened almond milk instead of Malk.
  • Use any unflavored or vanilla collagen powder instead of Vital Proteins.
These swaps bring your total cost down to roughly $4.50 per smoothie.

Marianna Hewitt’s Blue Coconut Cloud Smoothie

Marianna Hewitt, co-founder of Summer Fridays, created the Coconut Cloud smoothie with Erewhon in 2022 [1].

This recipe kicked off the entire Erewhon smoothie craze BEFORE Bieber’s version [1].

The color comes from Blue Majik spirulina, a blue-pigmented extract containing phycocyanin, a natural antioxidant.

The flavor is tropical, vanilla-forward, and nutty.

You need these key ingredients.

  • 1 cup almond milk (Malk at Erewhon),
  • 1 cup frozen pineapple,
  • 1/2 frozen banana,
  • 1/4 small avocado,
  • 2 teaspoons almond butter,
  • 3 tablespoons vanilla collagen peptides,
  • 3/4 teaspoon Blue Majik spirulina,
  • 1/4 cup Zuma Valley coconut cream, and
  • vanilla stevia [8].

You MUST use canned coconut cream, not carton coconut milk. Canned is thick and fatty. Carton is thin and watery. Chill the can overnight, then scoop only the thick part from the top.

Assemble it this way.

  • Paint coconut cream on the inside walls of a tall glass with a spoon.
  • Sprinkle Blue Majik powder over the cream smears.
  • Blend all remaining ingredients on high until thick.
  • Pour the smoothie into the prepared glass.
  • Top with a dollop of coconut cream and another pinch of spirulina.

The avocado adds creaminess without affecting flavor and helps the blue color stay vibrant rather than murky green.

Budget cost at home is around $4 per glass. Blue Majik spirulina costs roughly $20 to $25 per jar online, but one jar lasts 30 to 40 servings.

Bella Hadid’s Kinsicle Smoothie

Bella Hadid launched the Kinsicle at Erewhon in January 2023 [9].

The name comes from Kin Euphorics, Hadid’s non-alcoholic functional beverage brand. The flavor profile is an orange creamsicle loaded with Vitamin C, turmeric, and lion’s mane mushroom powder.

You need these key ingredients.

  • 2 oz Kin Euphorics High Rhode,
  • 6 oz orange juice,
  • 1 oz almond milk,
  • 1 banana,
  • 6 oz frozen mango,
  • 1 Medjool date,
  • 1 to 2 tablespoons coconut yogurt (orange flavor),
  • 1 oz coconut cream,
  • 1/2 oz fresh-pressed turmeric,
  • 1 teaspoon lion’s mane mushroom powder,
  • 1 oz aloe vera juice, and
  • 1 teaspoon vanilla extract [9][10].

The big upsell is Kin Euphorics High Rhode at roughly $35 to $40 per bottle.

This swap works.

  • Combine 2 oz orange juice with 1/4 teaspoon vanilla extract and 2 dashes of aromatic bitters (Angostura style).
  • You get the slightly bitter, herbal, citrus-forward flavor that High Rhode provides.
  • You lose the nootropic benefits but save roughly $35.

Assemble it this way.

  • Drizzle coconut cream around the inside of a glass.
  • Combine all remaining ingredients in a blender.
  • Blend until smooth. Pour into the prepared glass.

Home cost with the swap sits around $3.50 per glass. With actual Kin Euphorics, it climbs to roughly $8.

Do You Really Need Sea Moss?

“How much of this is nutrition and how much is marketing?” – Fair question.

Overhead comparison of splurge versus budget ingredients for Erewhon smoothie recipes, showing Vital Proteins collagen, hyaluronic acid, sea moss gel, and Blue Majik spirulina next to their affordable substitutes
Left side is what Erewhon uses. Right side is what works at home. The taste difference is minimal. The price difference is significant.
  • Sea Moss Gel adds thickness and contains minerals including iodine, iron, and magnesium [3]. Your Erewhon smoothie recipe will be slightly thinner without it. Swap with 1 tablespoon soaked chia seeds or 1/4 teaspoon xanthan gum.
  • Hyaluronic Acid (liquid supplement) is tasteless. A 2023 systematic review in Skin Research and Technology found oral HA improved skin hydration within 2 to 8 weeks [11]. Skip it to save money, or use aloe vera juice (1 to 2 teaspoons) for a hydrating alternative.
  • Blue Spirulina (Blue Majik) is a phycocyanin extract with antioxidant properties. The color is its main value. Butterfly pea flower powder costs about half as much and produces a similar blue hue.
  • Collagen Peptides provide the protein backbone. A 2022 systematic review in Dermatopathology found oral collagen supplements improved skin elasticity, hydration, and reduced wrinkling across multiple randomized controlled trials [12]. Any generic unflavored collagen powder or plant-based vanilla protein works as a substitute.

Troubleshooting Your Blend

  • “It is too watery.” You used fresh fruit. FREEZE EVERYTHING. Cut bananas into coins, spread berries on a sheet tray, and freeze at least 4 hours before blending. Frozen fruit is the single most important factor for that thick, viscous texture.
Side-by-side comparison of a too-thin watery smoothie versus a correctly thick Erewhon-style smoothie showing proper soft-serve texture and intact coconut cream swirls
Left is what happens when you use fresh fruit. Right is what happens when you freeze everything. The difference is that obvious.
  • “The layers mixed together.” Your smoothie base was too thin, or you poured too fast. Pour slowly into the center of the glass. The smoothie should hold its shape for a few seconds before settling.
  • “It tastes bland.” Cold temperatures mute sweetness. Your taste buds perceive less sugar when food is frozen. Add one more pitted date or half a tablespoon of maple syrup. Do not skip the sweetener.
  • “The coconut cream will not swirl.” Your cream was not thick enough. Refrigerate the can overnight and scoop only the solid white part. The watery liquid at the bottom is coconut water, not cream.

Your $21 Smoothie Costs $4.50 at Home

Three Erewhon smoothie recipes. Three sets of swaps.

You now have the exact blueprint for the Strawberry Glaze, the Coconut Cloud, and the Kinsicle.

A single Strawberry Glaze costs $21 at Erewhon [2].

Making it at home costs roughly $4.50 per serving. If you make two per week, you save over $1,700 per year compared to buying in-store.

The aesthetics are identical if you follow the assembly technique. The taste performs at about 90% of the original with the budget swaps.
