1 1 High-Speed Blender (Vitamix or Ninja recommended for thickness)
1 Small Saucepan (for the glaze)
1 Tall Clear Glass (clear glass creates the aesthetic)
1 Spatula or Spoon (for creating the coconut swirls)
The Strawberry Glaze
- ½ cup Frozen Strawberries (or fresh, chopped)
- 1 tbsp Maple Syrup (can substitute with agave or honey)
- 1 tbsp 1 Tbsp Water (just enough to steam the fruit)
The Coconut Cloud
- 2 tbsp Coconut Cream, from a can (full fat), chilled overnight; thick part only
- 1 pinch Vanilla Bean Paste (optional, for flavor)
The Smoothie Base
- 1 cup Frozen Strawberries (do not use fresh; it makes the smoothie watery)
- ½ large Frozen Banana, pre-sliced and frozen
- ¼ medium Avocado (adds creaminess without flavor)
- 2 whole Medjool Dates, pitted
- 1 scoop Vanilla Collagen Peptides (Vital Proteins or similar) [6]
- ½ cup Unsweetened Almond Milk (Malk is used at Erewhon)
- 1 tbsp Sea Moss Gel (optional; adds thickness and minerals)
- 1 tsp Hyaluronic Acid, liquid supplement form (optional)
- ½ tsp Vanilla Extract
Prepare the Glaze
In a small saucepan over medium heat, combine 1/2 cup strawberries, maple syrup, and water.
Simmer for 2 to 3 minutes until berries break down into a jam-like consistency.
Mash slightly with a fork.
Set aside to cool completely. Hot glaze will melt your smoothie.
Blend the Smoothie
Add almond milk to the blender first (helps blades spin)
Add frozen strawberries, frozen banana, avocado, dates, collagen, sea moss, hyaluronic acid, and vanilla
Blend on high. Use the tamper stick to push ingredients down. Target a soft-serve ice cream texture. If too thick, add more milk 1 tablespoon at a time. Do not over-dilute.
The “Erewhon” Assembly
Spoon the Strawberry Glaze into the bottom of your tall glass
Dip a spoon into the Coconut Cream, press the back against the inside walls, and drag upward to create 3 to 4 vertical white swirls
Pour the thick smoothie into the center
Optionally, top with a final dollop of coconut cream. Stir slightly with a straw for the marble effect.
- If you cannot find canned coconut cream, use coconut yogurt. Cocojune is the brand used at Erewhon. It is slightly tangier but works visually.
- Skip the sea moss gel if you do not have it. For the thickening effect, add 1 tablespoon of soaked chia seeds or flax gel.
- If you are Vegan, use a plant-based vanilla protein powder instead of collagen peptides
- Make sure your dates are soft. If they are hard or dry, soak them in warm water for 5 minutes before blending to avoid chunky bits
- The Hyaluronic Acid is purely for the “skin glow” marketing angle. It has no taste. Omit it to save money
- You can also use aloe vera juice (1 to 2 teaspoons) instead of hyaluronic acid drops.
